A family wine project across Spain

Vinos de Terruños is an independent, family-led Spanish wine project focused on creating wines with identity, coherence and international relevance.

Rather than operating as a traditional single-estate winery, we work across different regions of Spain, collaborating with selected organic and biodynamic vineyards when they genuinely add value to style, quality and origin.

The project draws on more than three decades of hands-on experience in Spanish wine, built on José Pastor’s long-standing relationships with small producers focused on organic, natural and biodynamic farming, with a clear focus on native grape varieties. His vision and way of working continue to define Vinos de Terruños today.

The project is now led by Teresa Pastor, who brings an international perspective shaped by her experience in the US market, including six years working in California within the family’s wine import company, focused on small-scale producers and terroir-driven wines. She continues to build on the values, relationships and long-term vision established from the very beginning.

Our Story

Since the 1980s, the Pastor Gilabert family has been connected to the world of wine through hospitality and wine retail, developing a deep understanding of Spanish wine culture and its regional diversity.


In 2003, Vinos de Terruños was founded by José G. Pastor, later joined by his daughter Teresa Pastor. From the outset, the project was conceived as a way of working across different Spanish regions, collaborating with small producers and experienced winemakers to create wines with a clear sense of origin.


Rather than focusing on a single estate, the aim has always been to build a coherent portfolio that reflects the diversity of Spain through native grape varieties, organic farming and a respectful, low-intervention approach in the cellar.

How we work

We work in close collaboration with small producers and a network of trusted winemakers across different regions of Spain.

Instead than following a single-estate model, each wine is developed in its place of origin, allowing us to focus on what each region and variety does best.

This approach enables us to build a portfolio that combines regional diversity with a consistent philosophy: organic and biodynamic farming, native grape varieties and minimal intervention in the cellar.

Style & philosophy

Our portfolio centres on Brut Nature Cava alongside a carefully selected range of still wines.

Across all wines, we prioritise purity of fruit and a clear expression of each variety, avoiding excessive oak influence. When ageing is used, it is done in predominantly second-use barrels to preserve freshness, balance and a sense of place.

White wines are often worked on the lees, bringing texture and complexity while maintaining tension and precision.

All wines are produced in small quantities, with a focus on restraint, clarity and respect for each vineyard.
